Does the paprika, at a high heat, go bitter? When I did the recipe it had a bitter after taste. Looks good but mine did not turn out quite right with the paprika.

Pork tenderloin is not as scary as the home cook might think. Make it. It's delicious and cheap enough to make you happy. I love a roasted pork loin or two for meal prepping.

My great-uncle was a famous chef in southeast Louisiana. He had a cooking show on television. He has 22 cookbooks that were published. He was a chef at Commander's Palace for a few years.
He and his friends would BBQ at some BBQ competitions every month. This is way back before social media was a thing. He passed 5 years ago. I showed him many videos on YouTube with people dumping mustard on good meat. He was 88 years old. His words not mine he asked if "those people were on dope" by doing that as a so-called binder. He made me laugh by saying my generation needs help. He said in his day that was unheard of. They used honey, molasses, BBQ sauce and something else to hold seasoning on the meat.
I explained to him that mustard became popular because of social media.
I always say people have the right to spend money they feel like they wish to.
