Paddywack/paddywhack is the common name for the nuchal ligament (ligamentum nuchae). This is the really strong ligament in the neck of cattle or sheep which holds the head up.
I was all in until he cut off the "fat cap", then you couldn't pay me to buy it. Fat is flavor and built in basting. My favorite cut of steak is a chuck roast, and I get so pissed when the store "trims" the chuck roast until it looks like a london broil, and you just know it will turn into shoe leather if you grill it.
