Yeah man, I’ve been coming to something like this on my own. Often, the probe alert goes off, but then I temp it with a thermopro, and it’s not uniform throughout. I’ve started checking multiple areas of the meat, finding the coolest, then leaving it in until that hits temp. Don’t always trust that first alert. Great point, great video, thanks!
So lt doesn’t hurt that one side could be 10 degrees hotter? As long as the minimum temperature is reached on both sides,
