48 Coles Frozen Potato Royals
480g pkt Coles Made Easy Slow Cooked Pork Shoulder With Apple & BBQ Sauce
1 avocado, stoned, peeled, mashed
1 small vine-ripened tomato, finely chopped
Chopped coriander, to serve
1. Preheat oven to 180°C. Grease a 12-hole ⅓ cup (80ml) muffin pan. Place 4 potato royals in each prepared hole. Remove packaging from pork. Transfer pork to a small baking dish and cover with foil. Bake the potato royals and pork for 20 mins.
2. Remove the potato royals and pork from the oven. Use a small flat-bottomed glass to gently press potato royals into a cup shape in the muffin holes. Uncover the pork and baste with the sauce in the dish. Return the potato royals and the pork, uncovered, to the oven and cook for a further 10 mins or until the potato royals are crisp and golden. Set the potato royals cups aside for 5 mins to cool slightly.
3. Meanwhile, use 2 forks to shred the pork.
4. Arrange the potato royals cups on a serving platter. Divide the pork among the cups. Top with the avocado and tomato. Sprinkle with coriander to serve.
