I have that same cast iron grill grate. Bought it 10 years ago from a company in the Netherlands 🇳🇱! Best grill great I’ve ever had for the Weber. You’re bbq style is very similar to mine.

I am not by any means a barbecue professional/professor but after viewing a few (1000s) or more wouldn't you put the fat side up so it will drip down and flavor/moisten the meat ? Im probably gonna start a feud ! Wellhowaboutit ????
