The legendary Antonio Carluccio finally makes his debut on Food Tube! We are honoured to have this incredible chef, author, restauranteur and old friend of Gennaro Contaldo share with us – and you – his authentic Italian carbonara recipe. So simple. So tasty.

  1. Thank you Chef Antonio, RIP. Over the years I tried many recipes and this is the best so far. I just made some modifications on my own:
    1. I drain the pork oil fully before adding pasta;
    2. I add a cup or two of spaghetti water to the sauce gradually and depending on serving size.

  2. Other than I've learned from a real Italian nonna, this is the best carbonara on YT. I'll tell you the two differences: I've learned to put the guanciale straight into the pan, without any oil or butter. Second, I've learned to use only the yolk, not the entire egg, Nonna said it will be much more creamy. And here I am, roughly 40 years later, still following her recipe. You can do whatever you want ofcourse, I don't care if you put Nutella in your carbonara 😉
