Recipe 177/365 – Fajita style spaghetti.
Heat 4-5 tbsp oil on high heat and add 1 large onion, sliced, 1 red bell pepper and 1 green bell pepper, sliced and cook on high flame for 2-3 mins. Remove from the pan and set aside. In the same pan, add 2-3 tbsp margarine/butter and let it melt. Add 6-7 finely chopped garlic cloves and cook for a min. Add 350g beef, cut into small pieces and cook until browned. Add the paste of 3 balanced tomatoes and mix well. Add the juice of 1/2 lemon. Add 0.5 tbsp paprika powder, 0.5 tbsp coriander powder, 1.5 tsp mixed herbs, 1 tsp pink salt, 1-1.5 tsp red chilli powder, 1 tsp garlic powder, 0.5 tsp black pepper powder, 1 tsp cumin powder, mix well and cook for 8-10 minutes on medium flame until the oil separates. Add 1/2 cup chicken stock and 1/3 cup double cream. Mix well and cook on medium flame for 2-3 mins. Add the cooked veg and mix well. Add 250g boiled spaghetti and mix until combined. Garnish with chopped fresh coriander.
