This Almond Vanilla Cake is light, moist, and topped with crunchy almond slices—a perfect, easy treat for any occasion
Ingredients:
3 eggs
150g sugar
150g melted butter
180g all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
60ml (1/4 cup) milk
1 teaspoon vanilla extract
Almond slices for topping
Instructions:
Preheat the oven to 165°C (330°F). Grease and line a baking pan with parchment paper.
In a mixing bowl, beat the eggs and sugar together until light and creamy.
Add the melted butter to the mixture and beat for another minute.
Sift in the flour, baking powder, and salt. Beat about 10 seconds until just combined
Pour in the milk and vanilla extract, mixing until just incorporated. Avoid overmixing to keep the batter light (or Gently fold them in until just combined )
Pour the batter into the prepared pan. Place a lightly oiled knife in the center of the batter to achieve a nice crack on top.
Sprinkle the almond slices over the top of the batter.
Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool before serving.
