It basically is bacon from being in a brine and then smoked. Ireland the UK use same same cut of pork only boneless for bacon.

I just tried to make the pepper jelly and failed miserably. It is more of a hard candy don't know what I did wrong. Too hot for the suger I'm guess not sure.
I’m wondering, dredge in some buttermilk or rub some olive oil on before putting it in the corn meal.

I like the overall idea of the pork chops but I find tea to be a vile substance. I wonder what it would be like using coffee? Something I will have to try soon….but no time this week….cooking for 55 wonderful people in a special needs community! Party on Wayne!

Brad, can you explain–why not just cold smoke it at a lower temp? Why risk the danger zone by smoking at a higher temp?
I'm gonna dock these Truth guys several points on presentation. The plastic side containers bum me out. A perfect BBQ tray has to be pretty.
