Chiles are the only thing I miss about New Mexico.
Roasted in tumblers made of galvanized steel… which emits large amounts of zinc when heated. Bon apetit!

We do that here in Arizona too. Most of the Hispanic grocery stores in the valley roast the New Mexico Hatch Green Chilies.
