Roast Pork Shoulder



Roast Pork Shoulder – Pork shoulders (also called butts or Boston butts) are terrific roasts, in my opinion, tastier than pork loin and definitely less expensive. You probably know dried porcini mushrooms, but porcini powder is something you might not be too familiar with. I use a lot of dried porcini in my cooking, for rubs, marinades, and stuffings; for me, it is the Italian umami. You can purchase ground porcini powder, or make your own by grinding dried porcini in a spice grinder. I foraged for porcini as a young girl, and also in Long Island and upstate New York. Porcini are best eaten fresh, but if you happen to have a huge find of porcini, it is good to dry those you can’t eat right away and make your own porcini powder.   1. This is wonderful, and you are the perfect host! Engaging, practical and explain everything very well. All I was looking for was which cut of pork I should buy for Sunday dinner, but this video gave me that and so much more. Love the dried mushroom trick too!

  2. This reminds me of a pernil in Puerto Rico, but we cut the skin cap away from the meat and then make knife cuts under the skin and marinade it for several days. The last day you can dry the skin, salt it and leave it uncovered overnight before roasting. The skin gets super crispy and makes cueritos
