🍗Ingredients for Spatchcocked Chicken Recipe:
4 to 4 1/2 lb whole chicken*
1/2 tsp salt (we used sea salt)
1/8 tsp black pepper,
4 Tbsp unsalted butter, softened
1 Tbsp olive oil, plus more to drizzle
1 Tbsp parsley, finely chopped
2 garlic cloves, minced
1/2 tsp lemon zest
1 Tbsp lemon juice
1 tsp salt (we used sea salt), plus more for vegetables
1/8 tsp black pepper,
2 lbs medium red potatoes, scrubbed and quartered
3 medium carrots, peeled and quartered
8 oz Brussels sprouts, trimmed and halved

Hi, would like to cook this for x'mas but I only manged to get hold of frozen brussel sprouts. Do I need to defrost the brussel sprouts in advance or can it be oven bake together with the chicken without defrosting?

Made this tonight, family loved it!! We are such Natasha fans! Every new meal I make, my family asks "is it Natasha's"? If I say yes, they get very excited! My only request is that you specify which type of parsley you are using. I try to look closely so I can see if it's flat or curly. Would help if you included that in the recipe. I tried this using tarragon as well and made a gravy from the chicken juice, it was delicious!

I just made this recipe and it was wonderful, so tasty, that butter has so much flavor and I add mushrooms to the vegetables as well and they were out of this world.

I make my chicken with a baking sheet and rack so all the grease drains below… the chicken actually cooks more evenly… crispy and less greasy…. One of my favorite ways to make chicken
