Roasted Spatchcock CHICKEN Recipe – ONE PAN Chicken Dinner



This Spatchcock chicken recipe is our favorite way to roast a whole chicken. Every part of the roasted chicken turns out juicy and so flavorful with that garlic herb butter.

🍗Ingredients for Spatchcocked Chicken Recipe:

4 to 4 1/2 lb whole chicken*
1/2 tsp salt (we used sea salt)
1/8 tsp black pepper,

4 Tbsp unsalted butter, softened
1 Tbsp olive oil, plus more to drizzle
1 Tbsp parsley, finely chopped
2 garlic cloves, minced
1/2 tsp lemon zest
1 Tbsp lemon juice
1 tsp salt (we used sea salt), plus more for vegetables
1/8 tsp black pepper,

2 lbs medium red potatoes, scrubbed and quartered
3 medium carrots, peeled and quartered
8 oz Brussels sprouts, trimmed and halved

  1. Hi, would like to cook this for x'mas but I only manged to get hold of frozen brussel sprouts. Do I need to defrost the brussel sprouts in advance or can it be oven bake together with the chicken without defrosting?

  2. Made this tonight, family loved it!! We are such Natasha fans! Every new meal I make, my family asks "is it Natasha's"? If I say yes, they get very excited! My only request is that you specify which type of parsley you are using. I try to look closely so I can see if it's flat or curly. Would help if you included that in the recipe. Thanks for all you do!!

  3. I made this recipe two times already in the space of one week. For my family and for a dinner with friends. Loved by everyone. The chicken is moist and so flavorful, the vegetables are amazing roasted in the melted seasoned butter and the olive oil. My mouth is watering just thinking about it as I write this review.
