I’ve never seen a spatchcock chicken done like that, I’ve always seen the backbone cut out then pressed out flat
Gizzard and the heart are almost the best part next to the thigh and leg. Always remove the part "that made it over the fence last". Excellent tutorial.

Whole chickens cost more than the individual parts now. Unless you're raising your own, it isn't worth it anymore.
Does this suggest that whole chickens are cheaper to obtain than individual parts? I don't think that's the case almost anywhere except for with cooked rotisserie chickens.
