Using my wifes You tube account 🙂 My name is Jon – Cooked this today – fantastic meal …. Only thing was i did not have fresh squid so instead I used some frozen squid in batter which I had brought before starting keto – I removed the batter as that has to many carbs for keto – if you have the same scenario simply defrost the frozen squid rings in batter then leave them to soak in warm water for about 10 minutes – now the batter should be soggy and wash off leaving you with just the squid
Thank you for the info about how to prep the saffron. Saffron is expensive and difficult to find where I live. So, very few people know how and why to prepare saffron.

I haven't tried this particular recipe yet, but have others. My Cauliflower rice seems to always become mush with liquid. What I could I be doing wrong?
Don't be scared! Honestly, we Spanish people have a zillion ways to make a paella and everybody fights on whose is the most authentic. Really? It's different depending on what village, city, or zip code you're from. So, glad you are brave!

Hola! I am Spanish! yeah, we do not put chorizo in paella, but add what you like, why not? I think your recipe is pretty good.I'm quite impressed. I would have cooked the grated tomato a bit before adding the veggies but apart from that… You can also add mussels and the prawn with the shell. Lol, socarrat! yes, it is the burnt part of it! it looks very nice I must say. How much water do you add per grams of rice cauliflower pls?

Why grate the tomatoes what does that do vs blending or smooshing. Should I do that with all tomatoes when I make sauces of catsup or bbq
My wife and I went to Madrid for a wedding and family made paella often and every time they made it with different ingredients. Sometimes seafood, meats, sometime all of them.
