Serves 3-4

Ingredients

For the Marinated Beef
300g (10.6 oz) beef (such as chuck), thinly sliced against the grain
45ml (1.6 fl oz) water
1 spring onion stem
2 slices young ginger
1 tbsp oyster sauce
½ tbsp premium dark soy sauce
½ tsp sugar
A few dashes of white pepper
A pinch of bicarbonate of soda
2 tbsp cornflour
1 tbsp cooking oil

For the Stir-Fry
3 cloves garlic, chopped
300g (10.6 oz) sour pickled mustard greens (酸菜), rinsed and chopped
250ml (8.8 fl oz) water
½ tsp sugar
1 tsp premium dark soy sauce, for colour (optional)
1 tsp cornflour mixed with 1 tbsp cold water, to thicken
