🌟 Wedding Style Steam Chicken – Recipe Card
Serves: 4–5
Marination Time: 1–1.5 hours
Cooking Time: 30 minutes
Method (Short & Clear)
Chicken Cleaning
Chicken को deep cuts लगाकर नमक + सिरके वाले पानी में 1 घंटे भिगो दें।
3–4 पानी से धोकर अच्छे से dry करें।
Quick Fry
High flame पर chicken को 5–6 मिनट deep fry करें, जब तक हल्की golden crust न आ जाए।
(Chicken 30–40% cook हो जाएगा)
Marination
Curds में सभी मसाले, lemon juice और ginger-garlic paste मिलाएँ।
Fried chicken को अच्छे से coat करके 1–1.5 घंटे marinate करें।
Steaming Setup
पतीले में पानी, साबुत मसाले और lemon peels डालें।
ऊपर छलनी + butter paper रखें और chicken arrange करें।
Steam Cooking
5 मिनट high flame, फिर 20–25 मिनट low-medium flame पर steam करें।
Final Touch
ऊपर से sesame seeds, crushed red chilli, lemon slices और green chillies डालें।

Ingredients – Wedding Style Steam Chicken (1 kg)
For Chicken Preparation
Chicken – 1 kg (leg & thigh pieces)
Salt – 1 tablespoon (for soaking)
Vinegar – 4 tablespoons
Water – as required (to soak chicken)
For Frying
Oil – for deep frying (as required)
For Marinade
Thick curd / Hung curd – ½ cup (100–125 g)
Lemon juice – 2 to 3 tablespoons
Salt – 1½ teaspoons (or to taste)
Chaat masala – 2 teaspoons
Crushed red chilli – 2 teaspoons
Red chilli powder – 1 teaspoon (adjust to taste)
Coriander powder – 2 teaspoons
Turmeric powder – ½ teaspoon
Garam masala powder – 1 teaspoon
Roasted cumin powder – 2 teaspoons
Ginger garlic paste – 1 tablespoon
Red/orange food colour – a pinch (optional)
For Steaming (Water Base)
Water – about ½ litre
Cumin seeds – 1 teaspoon
Black peppercorns – 1 teaspoon
Green cardamom – 4 to 5
Cinnamon – 2 inch piece
Black cardamom – 1
Lemon peels – from squeezed lemons
For Topping (Optional but Recommended)
Sesame seeds – as required
Crushed red chilli – as required
Lemon slices – a few
Green chillies – slit
