Gluten Free Blueberry Cake / No Oil or Butter Recipe

๐ธ RECIPE
Ingredients: Using 18 x 28cm cake pan
– 4 egg whites
– 1 tablespoon sugar
– 2 egg yolks
– 25mL milk
– 40g rice flour
– whipped cream
– blueberry compote
Recipe:
1. Whisk egg white until firm meringue forms. Add sugar half-way through.
2. In a separate bowl mix egg yolk, milk and rice flour.
3. Combine meringue and batter. Mix gently.
4. Pour mixture into cake tin lined with baking paper.
5. Bake at 170โ for ~10minutes.
6. Once baked let the sponge cools completely.
7. Divide sponge into 3 piece.
8. Layer with whipped cream and blueberry compote.
9. Repeat the layer.
10. Coat cake with whipped cream.
11. Ready to enjoy.
