I honestly dont like a lightly formed patty, the consistancy is way too mushy. Your bread can turn out chewier than the patty which is a weird feeling and makes it hella messy. I like a bite on my burger patty.
I use mine a lot. They never fall apart. But, I always put my patties back in the freezer to cool them down, from the warmth of my hand making up the mix. Makes brilliant burgers every time.

So I usually remix ground beef by hand, mixing in spices or chopped jalepenos or even mixing in chorizo or bacon bits before forming patties.

Watch a proper chefs video, they recommend pounding the meat so that releases the myosin which helps it hold form and makes it way more tender 🎉
