Ingredients For the BBQ pulled beef:
Make 5 Portions
800 g lean diced beef (5–10% fat)
1 small onion, finely diced
2 tsp chopped garlic
1½ tsp smoked paprika
½ tsp onion granules
½ tsp mustard powder
1 beef stock cube crumbled
1½ tbsp tomato purée
1½ tbsp light soy sauce
1½ tbsp Worcestershire sauce
1 tbsp honey
100g bbq sauce (I use Heinz Classic BBQ)
50g passata
1-2 ladles of water
Salt & pepper
Olive oil spray
Ingredients For Cheesy Mesh:
Make 2 Servings
500g maris piper potatoes
15g lighter butter spread
80ml semi-skimmed milk
40g reduced fat cheddar grated
Salt
Black pepper
Calories per portion:
303 Calories

Cooking Directions:
Spray a non-stick pan with oil and place over high heat.
Pat the beef dry and add to the pan in batches. Sear on all sides until browned.
Remove from the pan and transfer to the slow cooker.
Add the onion and chopped garlic, before seasoning with the paprika, onion granules, mustard powder, along with salt and pepper.
Crumble over the beef stock cube, before stirring through the tomato puree, soy sauce, Worcestershire sauce, honey, bbq sauce and passata.
Cook on low for 6-7 hours, or 3-4 hours on high until the beef is tender.
Shred the beef with two forks and simmer 5–10 min (lid off) to thicken the sauce until sticky and glossy.
To serve:
When there is 20 minutes left on the beef, add the potatoes to a large pan of cold salted water.
Bring to the boil for 12-15 minutes until tender then drain.
Season with salt and pepper, before adding in the butter and milk.
Mash until smooth and then fold in the cheese until well combined.

Trust me when i say this:
If you fry the tomato paste after you take the beef out of the pan, then use some stock to deglaze the pan(like, 50mls? You could also just use a little bit of water) followed by putting everything into the pot, it will be 1.5X better 🔥
