When was the last time you cleaned that grinder? Must add some added flavor to your spice mixture.
For heat, I almost only use gochujang. It tastes AMAZING

Yes, acidity, so important and so often forgotten. I like lime juice myself.
Question.. would a ,or tar and pestle work for cracking pepper corns?
I have the same Krups "coffee" grinder for my spices. I guarantee if you ever ground allspice, you can never get rid of that smell. lol
Thank you. You just saved me some cilantro. I alway just leave it in the bag tied up and only get it use them once and throw out more than half.
I enjoyed that. Last time I cooked with effort- I noticed my spices didn’t do anything- it didn’t enhance or lift a thing! (Taste) – so I am going to look for a good brand of spices.
I could watch jack all day
Ps you have a beautiful house
I love America's test kitchen! It would be my dream job to work there haha. Thanks from the UK
Greetings from Monterey, CA!! Thanks for tip regarding cleaning the spice (coffee) grinder! I tossed my very first one due to not being able to clean well. I'm marathoning all ATK videos!! Great work!! Thanks again!! 🙂👍
This is an excellent video but I have issues with two things. The stems have so much flavor on mild herbs like parsley. In fact, it’s where most of the flavor on the plant is. Two what dried herbs and spices are you using?! The ones from the supermarket have likely gone from warehouse to warehouse before they land in your kitchen and have no flavor. When I switched to Penzeys I was amazed at the difference in flavor. Unbelievable. It’s like they grow the herbs and spices themselves and then flash dry them before sending them to you. You can taste the plant. Amazing!
Love your videos
We would love to learn more topics like this please. Thank you Jack!!!
I absolutely love spices and herbs!!!! They make your food taste so good!! My favorite herbs are Sorrell and Marjoram!!
Why don't they put expiration dates on spices? I keep a permanent marker in my kitchen and mark it on the bottom of the spice when I purchase them.
Jack is a guy who likes his spices shaken, not stirred
Now I know how and why to do a few more things in the kitchen. Curbing wastefulness and getting the max out of my efforts will improve with these hints.. more please. !!!
