Smoked Al Pastor Ribs are JUICY
Al Pastor Ribs 🌶️ blow some minds with these. Recipe below!
INGREDIENTS
● 4 dried chiles de arbol
● 5 dried guajillo chilies
● 1/2 cup orange juice
● Juice of 1 lime
● ⅓ cup white vinegar
● 1 teaspoon dried Mexican oregano
● 1 tablespoon achiote paste
● 1/4 cup distilled white vinegar
● 3 whole cloves of garlic
● 1 teaspoon white sugar
● 2 teaspoons kosher salt
+ STEP 1: Hydrate the dried chiles with warm water for about 10 minutes. Drain the chiles and mix them in a blender with the rest of the marinade ingredients. Pour over the ribs and let them soak for at least 2 hours.
+ STEP 2: Top with a little of your favorite BBQ seasoning and smoke at 250°F for about 2 hours, or until the bark is set (should be around 165-175°F).
+ STEP 3: Wrap with your preferred toppings (butter, agave, etc.) using a sheet of Reynold’s Kitchens® Butcher Paper. Place them back on the smoker for another hour, or until they are close to 200°F and wiggly.
Rest for 20-30 minutes and serve!
