I’ve been wanting to make a Chuds version of the Arby’s beef & cheddar sandwich for a long time, and it’s finally here! Today I made homemade smoky roast beef, homemade onion buns & a homemade ooey gooey cheese sauce and it all comes together for a fantastic bite! 10/10! Definitely recommend giving this one a try folks!

Just made this with brisket. I did not make the buns. But I can confirm this will stay on the brisket left over list. The tangy “hot” sauce and the cheese sauce are legit! Darn good I tell ya! Thank you for the inspiration 🤙
Unless you're making a Croque Monsieur, Bechamel based cheese sauces are not great TBH, the roux dilutes the flavor of the cheese. A sodium citrate based cheese sauce would have been better in this application. Also, Arby's Sauce is not on the Beef Cheddar…it's more like a red French dressing on the Beef n Cheddar.

The sandwich looks amazing, but Arby's sauce isn't on a Beef N Cheddar. It's comes with Red Ranch, which is similar to a Catalina Dressing. No hate on your version though!

Bradley, brother… the "fat cap" on a tri-tip is nasty. Unless you go down to about 1/8 of an inch, it's not going to render well. It's great for making candles, though. Honestly, with a prime tri-tip, Unless something goes horribly wrong, there's no need for ANY external fat.
Arby's was one of the absolutely worst food chains out there back in a day. Their sandwiches were a bland of shoe leather topped with engine oil served on a squashed wall insulation. Some peeps loved it, but I am no longer friends with them for obvious reasons.

I've been watching Chud for a long time and I still don't understand how he puts a pan on top of a wood counter and it cooks. I don't know if its a conduction top or magic, but man it gets me every time i see it.

Arbys have closed down around here. I live in Napa CA. There are still a few open in other cities. For fast food, I like it. I love the Arby's horsy sauce. I used to grab handfuls of it to bring home. At the last Arbys I was at they had the horsey sauce in a pump to paper ramekin cup, so I couldn't score on the packets.(horsey sauce is like a mayo based horseradish) Oh well. Thanks for the video. Looks awesome! We have done a lot of tri tip, usually marinated from the butcher or just mustard with salt and pepper rub. The left overs are great for every thing.
I love making tri tip sandwiches. Smokey tri tip French dips are always a favorite at my house

I could never nail down a good description of Arby's Sauce, but I think your call about it being somewhere between a BBQ sauce and a Cocktail sauce is on point.

Brad, do you realize how often you say "X doesn't need to be trimmed to much because it's just going to be sliced/shreded/ground up etc" and then proceed to trim it like you're prepping a competition brisket? It's gotta be at 98% + 🤣
