How did they turn out? I always judge my ribs doneness by how much I can see the bone pop out and not usually based on time. You should do a video on the bend method too, so people who want to get great at BBQ have different methods to see the Ribs tenderness
Long story short Ive been smoking for about 13 years. I own 3 very lucrative food trucks. I started smoking on the weber kettle. The absolute best method is the snake method, look it up. It does require attention, but it will make great BBQ. NEVER TRUST THE THERMO ON THE LID! Buy a Bluetooth setup, and trust it. You will have to adjust the top vents from time to time, but leave the bottoms on full send. You will also need to rotate the whole cooking grate during the cook. The Kettle was designed to grill, not BBQ. You can buy a slow'n'sear but that is $20 worth of metal for $300. Next, use regular Kingsford, don't use lump, or competition, or any other fancy coal! But at the same time don't use subpar charcoal either, just normal Kingsford. Good luck to ya! Keep on SMOKIN!!!
