I cut the backbone out of it to make it lay flatter and hopefully cook more evenly. I used SPG for the base rub and followed up with The BBQ Rub for some color. Took 3.5 hours to cook and I made some buffalo chicken dip out of the breast meat. Ate the rest of the chicken at work for lunch.
By the way, I did wait 20 minutes after getting the chicken off the grill before I cut into it. Looks like I immediately cut it, but I typically wait up to 30 minutes, but it was getting late and everyone was hungry so I only waited 20 minutes, which I think is long enough anyway for something small like this chicken.

Give the Smokin Pecan 100% pecan shell pellets a try, I followed another youtubers suggestion and mixed 2/3 pecan pellets with 1/3 royal oak charcoal pellets to smoke a brisket last weekend. The wife and I both thought there was plenty of smoke flavor (also only my 2nd cook on my 590). You might want to put both probes in some ice water to make sure they are reading the same temp. If they aren't there are instructions and/or videos on how to make adjustments. Hope this was helpful!
