  1. Chicken breast held at 140 for 2 minutes is same safety as taking to 165. It’s a temp + time equation. That’s how you get juicy white meat. Dark meat needs 175-185 to render intramuscular fat.

  2. Looks great not what I traditionally know as smothered chicken but it looks delicious and actually healthier with all the veggies! I bet it would be great on rice or on tortillas! Thank for the recipe/inspiration!
