Chicken breast held at 140 for 2 minutes is same safety as taking to 165. It’s a temp + time equation. That’s how you get juicy white meat. Dark meat needs 175-185 to render intramuscular fat.

chicken breast can come off around 145-150 and its so damn juicy. generally 165 is for chicken that has a decent amount of fat (drumsticks, thighs)
