  1. I remember listening to NPR's annual Thanksgiving emergency cooking Q&A a few years back, and Shirley Corriher was the guest. She said you don't need softened butter to cream it, just cut cold butter into tablespoon-sized chunks and run that in the stand mixer with the sugar. The mixer's beaters will do the same thing the rolling pin is doing in this video. This means it will take a little while longer to reach fluffy creamed butter, but it will get there.

  2. Heat a glass of water in microwave, stand butter on end in wrapper. Dump water and place the warm glass over it like a dome. Works perfect everytime! Need many sticks softened at once just use a bowl upside down after heating it. 👍

  3. Perfect…so many well..uninformed human still use the microwave which kills all nutrients and destroys any molecules that resemble food..or water..people wonder why they are over weight, their kids are over weight..called a weapon, Microwave
