I remember listening to NPR's annual Thanksgiving emergency cooking Q&A a few years back, and Shirley Corriher was the guest. She said you don't need softened butter to cream it, just cut cold butter into tablespoon-sized chunks and run that in the stand mixer with the sugar. The mixer's beaters will do the same thing the rolling pin is doing in this video. This means it will take a little while longer to reach fluffy creamed butter, but it will get there.

I usually grate the butter. The small pieces then take only a few minutes to soften.
Heat a glass of water in microwave, stand butter on end in wrapper. Dump water and place the warm glass over it like a dome. Works perfect everytime! Need many sticks softened at once just use a bowl upside down after heating it. 👍

Take the amount of butter you want to soften. Fill a bowl with boiling water, then after a minute pour out the water and invert the bowl over the butter. Three minutes later, the butter should be soft. Not mashed.

You can also soften it by remembering to take it out of the fridge an hour or so before cooking.
i would recommend peeling off the wrapper BEFORE pounding it
