How long do I marinate the chicken for
I am definitely going to try this and will update when I do. I wonder if there is a way to add a vegetable to this so it will really be a one pot meal. I'll be thinking on that. I so wish I could get shishito peppers here. This is perfect to try for picky 4 year old grandkid, non-spicy eating daughter, and will add some sauce on the side for spicy loving grandparents LOL
We made this dish and i wasn’t a fan. It could’ve been the choice of soy sauce we used, or the rice. Seems like the only short grain rice we could find in the USA was sushi rice, so we just used the long grain rice we had. The rice was overcooked, and there seemed to be no flavor separation within the dish considering it’s a “one pot”. I know not all soy sauce is made equal, thus depending on what kind you use will effectively change the intended flavor, as it seems like the only soy sauce you can get without going to a “specialty store” is Chinese soy sauce, which is not the same as Korean soy sauce. I would love to try this recipe again with better/authentic ingredients.

It’s such an easy dish with an amazing amount of flavour. My family loved it!
I did add a little bit of red pepper powder, just to give it a kick. My family loves spicy but sometimes we just need a liiiiiiittle bit of a kick. Not a full blown spicy punch. 😋
This was a absolute hit with out picky 10 year old – the rest of us enjoyed it too (with some spicy sauce on the side to keep everyone happy). Thank you ❤

Hello from NYC! I made this today and even with some modifications (I don’t like dark meat so I used chicken breast marinated overnight and also used short grain brown rice), it was perfection! 👍🏽 The shishito peppers really make a difference! I also want to try adding ginger paste the next time I make it.. (PS: Congrats on the cookbook – I ordered a copy and will get it tomorrow.)

What size and type of pot are you using.
It looks like cast iron. Possibly Le Creuset? 6 quart?
