This mami noodle recipe has beef brisket and tendons. It was simmered for 4 hours in total due that the tendons are extra tough, but the long process was worth it in the end and I like it low and slow. The soup was oozing with umami goodness and the meat are extra tender. In just a few minutes this dish was gone. My family loved it!

This is similar to beef pares that Filipinos love but while pares contains star anise, this one contains 5-spice. Not too much, but just a tiny amount that it does not overpower the whole dish and that’s how it should be. The end result was a mellow flavor that’s packed with explosive deliciousness due to the umami.
