Wouldn't using the water that the pasta was cooked in to thin the pesto do better than plain water for taste and texture ?. Wouldn't that stop the "clagginess" from the get go ?

not even italian and i got offended by that pesto … even though pesto is a sauce you can use other types of ingredients, but the lack of flavorful herbs and olive oil made me cringe …. i would only remove olive oil if there is actual high heat involved but other than that you keep the olive oil

You can't tell me spinach will be as good as basil! Basil is fragrant and goes bang in your mouth, spinach would be so mild!!!!! I also think if you won't use pine nuts, using some toasted macadamias would have been a creamier alternative. If you wanted a cheaper pesto, at least use half spinach and half basil?!?!?!?!?
