Spicy grilled chicken sandwiches. Got this recipe and idea from @meatchurch and it’s a good one!
Marinate boneless, skinless chicken thighs in pickled jalapeno juice, a handful of the jalapenos and my sweet BBQ rub. I let these sit in the fridge overnight. The next day, shake off the marinade, season with my sweet BBQ rub and grill over charcoal. Add some cheese at the end, toast up the buns and assemble.
These are so easy to make, and they come out delicious! The perfect mix of spicy, sweet, smokey. So good!
