Pasta please!! Recipe below! This time is broccoli pasta! You can use are just broccoli and cheese if you want, but I added black pepper and pancetta. This is traditionally from Sicily. This dish is so diverse. It’s often made with a lot of additions like hot peppers, lemon, or what I used, pancetta. However the original is just broccoli, and I think that’s a perfect dish by itself!

I normally don’t measure any ingredients, I cook by feeling, and you should too! But here are some guidelines for the recipe:
Ingredients:
Broccoli
Pancetta (optional)
#locatelli pecorino cheese (No affiliation)
Delverde Spaghetti (No affiliation)
Black pepper
1. Start to cook the pancetta slowly in oil so the fat comes out. Bacon is not a good option. Guanciale is also a great option.
2. Cut the broccoli into very small pieces, I always use the stem.
3. Salt the water and boil the broccoli after washing thoroughly
4. Remove the pancetta for later, the fat and oil should give flavor to the broccoli
5. Add the broccoli in the pan
6. Cook the pasta in the salty broccoli water
7. Add water and continue cooking the broccoli in the pan on medium-high heat, the broccoli should get wet and soft to create a chunky cream
8. Cook the last minute of the pasta with the broccoli, mix together
9. Add pecorino or parmesan cheese
10. Enjoy your #broccoli pasta!
