🍗 Golden Chicken Fry with Milky Cottony Soft Paratha
A royal Sunday brunch combo that melts in your mouth — once you taste it, it’s sure to become a weekly favorite!

🕒 Prep Time:
Chicken: 1 hour (includes marination and cooking)

Paratha Dough: 30 mins rest time

🍳 Cook Time:
Chicken: 20–25 minutes

Paratha: 10 minutes

🍽️ Serves: 4–5 people
🧂 Ingredients
🍗 For Golden Chicken Fry:
Chicken Marinade:
1 kg chicken (preferably bone-in, medium to small-sized pieces)

1 tsp salt (adjust to taste)

Juice of 1 large lemon

For Masala Powder (Dry Roast/Grind Together):
7 dry red chilies (normal or Kashmiri for color)

5 cloves

6 green cardamoms

2 tbsp coriander seeds

1-inch cinnamon stick (or 3–4 small pieces)

1 tsp cumin seeds

1 tsp fennel seeds

1 black cardamom

1 star anise

1 mace (javitri) piece (as shown)

1 tsp black pepper

For Cooking:
½ cup cooking oil

2 medium-large onions (approx. 150g, finely chopped)

Salt (just a little while frying onions)

2 tbsp crushed ginger

2 tbsp crushed garlic (or use ginger-garlic paste)

1 tsp turmeric powder

A handful of kadi patta (curry leaves)

5–6 green chilies (slit lengthwise)

Chopped coriander leaves

Optional: lemon juice for finishing

🫓 For Milky Cottony Soft Paratha:
4 cups all-purpose flour (maida)

½ cup warm milk

1 tbsp sugar (mixed into the milk)

Salt to taste

2 tbsp oil (for dough)

Additional water (as needed for kneading)

Extra oil (for folding and cooking)

Dry flour (for sprinkling)
