For really stubborn odors, I bet rice, then some baking soda, then rice again would really get it super clean and fresh smelling. A few cents of ingredients too.
Any Chinese person knows that you cannot throw away that rice. Feed it to the bird and/or compost it for the worms and micro organisms. Throwing away rice is bad luck.
But how do you keep it from making the coffee taste like wood in an antique manual grinder

A toothbrush will get the stuff out of the nooks and crannies. Wipe with a damp parer towel.
