Your proclaimed "Test Kitchen" trick has been done for ages in Thailand. Don't claim it if you didn't originate it. Plus your knife skill is just not as good as those street vendors where you got the idea from.
I'd imagine the end of a potato peeler would work better than a melon baller…

great idea! i just slice into thick rings and cut inside of it and the middle core and that's how i get the eyes off instead of peeling it.
