Awesome, I had that problem cooking chops yesterday. My answer was to cut off the fat. This one is much better.
Go one step further and hold the meat with tongs against the pan to crisp the fatty outer layer. This process can reduce buckling as well.
Great tip. I used to cut into the chop to get it to stay flat, but it dried out. From now on I'll do this. You keep making my life easier. Thanks!
