America’s Test Kitchen is a real 2,500 square foot test kitchen located just outside of Boston that is home to more than three dozen full-time cooks and product testers. Our mission is simple: to develop the absolute best recipes for all of your favorite foods. To do this, we test each recipe 30, 40, sometimes as many as 70 times, until we arrive at the combination of ingredients, technique, temperature, cooking time, and equipment that yields the best, most-foolproof recipe.
Each week, the cast of America’s Test Kitchen brings the recipes, testings, and tastings from Cook’s Illustrated magazine to life on our public television series. With more than 2 million viewers per episode, we are the most-watched cooking show on public television.
More than 1.3 million home cooks rely on Cook’s Illustrated and Cook’s Country magazines to provide trusted recipes that work, honest ratings of equipment and supermarket ingredients, and kitchen tips.

Do's and Don't's
wear gloves. duh.
A year old I know, but the absolute best thing to drink to clear the burn is a vodka, the capsaicin bonds VERY well to alcohol, must better than to your tastebuds or to dairy products. Instant burn relief.
My wife once made jalapeno jelly for some flautas we were having, while boiling the concoction she stuck her face over the pan to small the wonderful goodness, realised her mistake within minutes, she basically pepper sprayed herself.
Scoop!

Awesome, thanks. I'll have to try that sometime!
Oh…I too know that there are FAR worse things you could touch…but at the end of the day, we're a family friendly show, so I had to leave my 'kitchen rated' sense of humor at the door!
I can, from first hand experience, tell you that there worse things to touch than the eyes 🙂
all hail the almighty pepper
Also try to avoid scratching your face or even putting your hands near your face after touching anything spicy.
Do you know that you can rinse off the heat of capsicum on your hands with vinegar? Basically anything acidic will do. Even lemon juice does the trick.
