I wouldn't pay attention to Jack either… he doesn't know diddley squat about much of anything.
My theory, eat less meat but eat better meat. Skip the cheap steak or bacon for a couple of meals, then have really good meat for one. Think we all need to eat more veggies and veggie protein.
Usinger's applewood smoked bacon – exceptionally good. I get it for about $10 per pound at Findlay Market in Cincinnati.

What he calls "funk" is actually the processes of fermentation and decomposition. Perhaps the gourmands can convince themselves and their sheeplike devotees that this is a preferable taste, but….no.
Taste is subjective. No such thing as a "tasting expert".
