Baking Soda also imparts a unique flavor which… can be kind of gross if you use too much. I wouldn't recommend this for ground meat but you can soak any whole pieces in a solution of water, soy sauce and a little baking soda for 15+ minutes and it will be very tender when you cook it + you can rinse it before cooking if you want less baking soda flavor. I usually do 8 oz water, 1 oz soy sauce and 1 tsp. baking soda (scale up from there).
I’ve tried it. There is ,though a funny taste left in the meat from the baking soda. I no longer use this method.
Too much baking powder will mess up your teeth. You have to dose it very carefully.

I've tried this numerous times with different ratios and always makec the meat taste weird.
If you want good browning, just don't crowd your pan.
