Alright everyone, I’ve been receiving some requests to post some Thai recipes, so this is my first attempt at filming and publishing a Thai street food recipe known as pad kra pao gai (ผัดกระเพราไก่), and I’m excited. When I first moved to Thailand, most of what I did was only eat, and discover all the amazing food there way. I lived in a small studio apartment without a kitchen, so I wasn’t able to do much cooking or sample the many Thai recipes I had wanted to try out. But after getting married and moving into a house, we now have a kitchen, and while normally my wife and her mother do the cooking (which is outstanding by the way), I have had a chance to make some Thai street food recipes as well.
For this Thai basil chicken recipe (pad kra pao gai ผัดกระเพราไก่) here are the ingredients you’ll need, but really, you should click here to see all the ingredients and directions on my website.
1 egg
2 tablespoons of oil for frying
1 chicken breast (or any other cut of boneless chicken, about 200 grams)
5 cloves of garlic
4 Thai chilies
1 tablespoon oil for frying
1 teaspoon of oyster sauce
½ teaspoon light soy sauce
½ teaspoon sugar
1 splash of dark soy sauce
1 handful of Thai holy basil leaves
1 plate of hot freshly steamed Thai jasmine rice – I also really like brown rice.
Now, the ingredients listed here for the Thai basil chicken recipe (pad kra pao gai ผัดกระเพราไก่) are what I used. But that being said, Thai food is very much a taste based cuisine, meaning that you really need to taste test your cooking. Don’t just assume all these measurements are correct for your taste buds – and sometimes the seasonings we use can differ a bit. So use these ingredients and cooking directions as a guide instead of as exact measurements.

I made this for lunch today 🤤 soooo good and filling! I'm from the philippines so i only had bird's eye chili and i was only able to get sweet basil from the grocery store so it may not be as spicy and aromatic but it's still damn DELICIOUS. Btw for other filipinos planning to try mark's recipe it's fine to use datu puti soy sauce as your dark soy sauce just make sure you start with half a tablespoon then adjust as needed (i used 1 tbsp datu puti toyo for 400g chicken with 2 tsp mama sita's oyster sauce, 1 tsp sugar and 1 tsp pantai light soy sauce but found it just a tiny bit salty so i added two more pinches of sugar and a half teaspoon of water to balance it)
You know it's good when Mark closes his eyes the minute he starts savoring the food in his mouth.
I'm assuming that is thai dark soy, not chinese dark soy?

Is there a difference between holy basil and Thai basil or are they the same thing? I see Thai basil at a local Asian supermarket, but I've never seen holy basil.
