1 Cup flour
1 Cup yellow corn meal
2-3 Cups grated Parmesan cheese
2-3 TBS Lawry’s seasoned salt
1 TBS garlic powder
1 TBS paprika

I scored a cheap, new in box deep fryer at a thrift shop yesterday. Today I picked up a couple of fillets of haddock from my local fishmonger and a few onions.
Light olive oil in the fryer.

I waited 'till I tried it before hitting 'like', and your breading ROCKS.
I used your proportions, following your advice not to stress about exactitude. I did put a few oz. of a hoppy IPA in a dish to moisten after the first dredge, and did a 2nd pass.
Mayo, mixed with relish plus a little lemon juice makes a good tarter sauce.

It’s January 2025 at this time of contacting you. We live in Missouri, crappie and catfish are our frying fish. We catch a walleye every now and then, if we’re lucky. Walleye are the best. Haven’t tried your breading yet, we will. My question is, what do you do with the oil after frying the fish, do you save it to use again, if you save it how many times are you comfortable using it? Or do you throw it away? Enjoyed your very nicely done video, thank you for making it, can’t wait to try your breading. Jack

it looks really good . im going to try it tomorrow . i usaully do 1 part original shore lunch , 1 part cajun shore lunch and 1 part hungry jack mix . ill season with lemon pepper after cooking . cant wait to try yours , thanks for sharing.
