This video will show you a recipe on how to make the iconic Chicago Italian Beef Sandwich .We will show you how to bake the bread, making giardiniera, and the beef from scratch.
— Enough for 6 half size sandwiches —
Giardiniera(2 mason Jars 25oz):
300g 11 oz carrots
300g 11oz cauliflower
3 stalk of celery
3-5 cloves of garlic
5 sweet peppers
1/2-1 Jalapeño (or similar)
400g 1 1/2 cups White vinegar
200g / 3/4 cups Water
24g 1 1/2 tbs Salt
Italian Bread (enough for 3 rolls)
270g/ 1cup Water
6g / 1/2tbs Instant Dry Yeast
8g / 1/2 tbs Diastatic Malt Powder ( Optional)
400g / 2 3/4 cup Bread Flour (all-purposes also en option)
10g / 1/3tbs Sugar
20g / 1 1/3tbs Olive Oil
8g / 1/3 tbs Salt
Cornmeal to sprinkle on the baking tray ( optional)
Broth:
3-4 kg / 6-8 lbs beef shanks — best way to make the broth
We used the following meets because we couldn’t get beef shanks:
2lbs bones with bone marrow
4lbs of beef ribs
1-2 lbs taco beef
2-3 liter (8-10 cups) of water
Italian Beef
1-1.5kg / 2-3 lbs top round roast
Peppers/ Salt for seasoning
To season the broth:
2.5 g / 1 1/2 tbs oregano
2.5g / 1 1/2 tbs basil
36g/ 2tbs sea salt
19g / 2 tbs ground black pepper
3g/ 1 tsp paprika
3g / 1tsp red chilli freaks
1 tbs onion powder
1 tbs garlic powder
120ml / 1/2 cup red wine
45 ml / 3 tbs Worcestershire Sauce
400 ml / 2 cups Beef broth that we made before
