I love the technical and specific approach you share to cooking.     One request: Is there a way to modify the cake recipe (and other ATC and CC recipes) so that they have less sugar and butter but still taste good? I know you put so much time in getting the mix of ingredients right and I was hoping there might be a formula for just making thing a little less sweet. Thank you your help! Warmly, James
