  1. The way I do it in the kamado, I set the pot above fairly high (~130⁰C) indirect heat and throw in a generous knob of margarine and sliced onions. On top of the pot goes a grill grate where I lay down the seasoned slices of meat to collect smoke and allow the drippings to fall into the pot and mix with the caramelizing onions. When I'm happy with the outside colour on the meat I cube it up and add it to the pot together with the remaining ingredients, with the exception of soft vegetables that you should be able to recognize in the finished dish, and then the lid goes on. So in the case of making chili con carne canned beans and corn only go in for the last hour – if using dried beans they go in directly with about twice their volume in additional liquid added to the pot.
