  1. Would more air flow increase pit temperature? I built, from scratch, a drum smoker, and am having some difficulty getting the heat right. I used 1/2” inlets, and I’m considering increasing them to 3/4”.

  2. Ide like to see your take on pozole…my wife and I just made some and I smoked the chunks of pork before we added them to the the rest of the soup….that kiss of smoke put it over the top….really good….but would like to see your version of it.

  3. LOVE LOVE LOVE making barbacoa with cachete. I like to do a mix of cachete and lengua so I get the sticky richness of the cachete with the super beefy flavor of the lengua. I smoke both low and slow, not enough to cook them, but enough to get em smoky while staying out of the danger zone, then I braise it for a few hours. Makes the most kickass tacos ever

    Actually that didn't look like guacamole you were making looks like a avocado salsa🙂.
    I like hot and juicy, but you needed to cut off those 1 lb chunks of fat and connective tissue off of that meat before cooking it. Just gross and too oily, not healthy. Probably didn't need to add extra old oil to that stuff either. (Don't ask me, ask your doctor 😅😉)
    Actually it's making me think of just too much grease coating my mouth and ah… Intestines 😅
    Actually have you ever had those crap Walmart hamburger patties that after you eat them you feel sick and your mouth feels like somebody brushed it with cold layer of lard that won't come off! 😲🤢 Well don't go find out! I recommend you just stay away from it!😅. Dang that was a lot of oil in that salsa lot of oil and habaneros I saw that oh he's going to pay for eating that😅.. next time a handful of ghost peppers! 😅😜. Yep I was kind of like you thinking do you really need smooth, fatty, avocado / guacamole with greasy oily meat…
    But then you know… Guacamole! 😅🤤
    Well it still should have been tasty. And dang it! Now I'm hungry for tacos!😖🤪

    The barbacoa looks great.

    Habs aren’t my favorite pepper for a savory hot sauce. Prefer them in a fruit-forward, fermented condiment. But I might try the sauce recipe with a mix of red jalapeños and serranos.
