  1. Can you make Appam (A South Indian pancake made with fermented rice batter and coconut milk. It's often served with stews or curries)

Here's a basic recipe for making Appam:
    Ingredients:
    • 1 cup raw rice
    • ½ cup grated coconut
    • ¼ cup cooked rice or poha (flattened rice)
    • ½ teaspoon salt
    • 2 tablespoons sugar
    • ½ teaspoon instant yeast (optional)
    • Water for soaking and grinding

    Instructions:
    1. Soak the rice: Wash the rice and soak it in water for 4-5 hours.
    2. Grind the batter: Drain the soaked rice and add it to a blender along with the grated coconut, cooked rice, salt, sugar, and yeast (if using). Grind to a smooth and fine batter, adding water as needed.
    3. Ferment the batter: Transfer the batter to a bowl, cover it, and let it ferment at room temperature for 8-10 hours or until it becomes bubbly and slightly risen.
    4. Heat the pan: Heat an appam pan or a non-stick pan over medium heat.
    5. Pour the batter: Pour a ladleful of batter into the center of the pan, swirling it to coat the sides.
    6. Cook the appam: Cover the pan and cook for 2-3 minutes, or until the appam is cooked through and the edges turn golden brown.
    7. Serve: Remove the appam from the pan and serve hot with your favorite stew or curry.

    Tips:
    • For a softer appam, you can add a little more water to the batter.
    • If you don't have an appam pan, you can use a regular non-stick pan.
    • You can add a pinch of baking soda to the batter for extra fluffiness.
    • Appam batter can be stored in the refrigerator for up to 2 days.

    Enjoy your delicious homemade Appam!
