  1. I make mayo often only used a machine once, and I find it super easy to do by hand. I don't drip in the oil I just put some in and whisk, then put in more and so on. You can put surprisingly much oil in at once. I also don't add mustard in the beginning because I find it makes it harder to start.

  2. If you're adding water anyways why not just use the whites aswell? Plus if you're using the hand blender method it makes it alot easier cause you have more liquid to start so that the blades can catch the oil droplets

  3. Why wouldn't you just use a stick blender. You can emulsify your mayo in the jar you're going to store it in. Also a stick blender can do a dozen other jobs in your kitchen smoothing soups whipping cream, as well as egg whites. Orvtorturing small children.
