Why would you not use an electric mixer?
I make mayo often only used a machine once, and I find it super easy to do by hand. I don't drip in the oil I just put some in and whisk, then put in more and so on. You can put surprisingly much oil in at once. I also don't add mustard in the beginning because I find it makes it harder to start.
If you're adding water anyways why not just use the whites aswell? Plus if you're using the hand blender method it makes it alot easier cause you have more liquid to start so that the blades can catch the oil droplets
It taste amazing bc you can add spices, etc. my only issue is that I cannot make it in bulk bc it goes bad quick
I will always use a hand blender and a jug, easiest and almost fail proof way to make mayonaise. To this day I will use the way I learnt to do it from the binging with babish video about it

It's so easy with an immersion blender. This makes it seem difficult. Egg+oil+blend add more oil as you want.

Ill have to give it a try. Never had homemade mayo. I sure do miss Mrs Filberts mayo. It was the best hands down!!

I sometimes add a whole cup of oil at a time, never had any problem doing that with whisk. This whole drop thing is just annoying and not necessary

Why wouldn't you just use a stick blender. You can emulsify your mayo in the jar you're going to store it in. Also a stick blender can do a dozen other jobs in your kitchen smoothing soups whipping cream, as well as egg whites. Orvtorturing small children.

My grandmother, who would have been making mayonnaise around 1900, had a cleaned out tin can that had a hole in the bottom, that allowed the oil to drip slowly enough not to break the emulsion, while she whisked!
Immersion blender! And the flavor of the oil is important. I like to use a flavorful olive oil when I make mayonnaise for baguettes with salami, prosciutto, or other salty dried meats.
