Chef reminds me of TV chef Justin Wilson who was from New Orleans. He's got that bubbly, excited to cook and eat vibe Justin had. You even say onion just like him, which is what made me think of Justin! Justin was also what I would call an intuitive cook. If it didn't taste right he fixed it as he went by tasting constantly. My grandmother used to say a recipe is simply the bones of a house. I will be making these today Chef, thank you. Looks wonderful!
